Build Those Muscles with Cheesy Spinach Squares..and Get Your Antioxidants Too

Getting lots of antioxidants in your diet is so much easier than you think: you can steam those deep, leafy greens, enjoy them in Eggs Florentine, or add them to your smoothies.  With this recipe, you have protein packed squares for a snack or make them into lunch by adding a side salad or steamed veggies.

I modified the original recipe to make it gluten-free and lower in fat.

Here’s the recipe:

 

Cheesy Spinach Squares

2 large eggs

6 Tbsp oat flour

1 pkg. (10 ozs.) frozen chopped spinach, defrosted, liquid squeezed out (save for Veggie Broth)

2 cups low-fat cottage cheese

1 cup grated Cheddar cheese, extra sharp is best

Freshly ground black pepper to taste

1/8 tsp cayenne pepper or to taste

Pinch of freshly grated nutmeg

3 Tbsp oat bran

In a large bowl, beat the eggs with the flour until the mixture is smooth.

Add spinach, cottage cheese, Cheddar, and seasonings and mix well.

Pour the mixture into a well-greased 13″ X 9″ baking pan and smooth out top with spatula.

Sprinkle the top with oat bran.

Bake in a preheated 350 degree oven for about 45 minutes, until set and lightly browned.

Let the mixture stand for about 10 minutes, then cut into 1 1/2 inch squares.
